AUSTINBURG TOWNSHIP — Ashtabula County residents soon will be able to satisfy those late-night cravings, as the Waffle House is slated to open at the end of September.
The new restaurant, at the Interstate 90 and Route 45 interchange, will be the third for franchise owner Bill Baldwin of Concord. Baldwin owns Waffle Houses in Concord and Willoughby. Construction began on Baldwin’s newest location June 16 and is progressing, he said.
“We have started taking applications and are hiring people to start in Concord for training,” he said.
Baldwin said initially, he is looking to open the Austinburg location with about 50 employees. Eventually, he said the restaurant will average about 20 to 25 employees.
“It’s busier when we first open,” he said. “There’s also a high turnover, so it will even out.”
Baldwin said everywhere he goes, people tell him they are excited about the restaurant’s anticipated opening but people are also concerned about its size. People are concerned it’s small.
“It’s a 38-seat restaurant with anywhere from three to 12 employees working at one time,” he said.
The establishment is open 24 hours a day, seven days a week.
“We never close,” Baldwin said.
Baldwin also may be planning on opening additional locations in Ashtabula County or in neighboring Lake County.
“Geneva and Madison are the next logical choices, but nothing is definite yet,” he said. “It all depends on how well this one does.”
